Cant afford one of those fancy oak casks? You can imitate the flavor achieved by aging in a cask with these oak chips. For white wines, use 1 to 1.5 cups, 2 to 3 cups for red wines. Simply boil in water for 10 minutes, then drain and place the chips in your plastic or glass fermenter before transferring.
